To Baking Enthusiast That Want To Kick Mothers Day Up A Notch – Simple Mississippi Mud Cake For Mother’s Day

Cake ingredients:

  • One chocolate cake baked in a 13×9″ baking pan (you can follow the directions on a box mix or bake your own homemade chocolate cake; your preference)
  • 1 (10.5 ounce) bag of miniature marshmallows

Frosting Ingredients:

  • 1/2 cup (1 stick) butter
  • 6 tablespoons of milk
  • 3 heaping tablespoons of cocoa powder
  • 1 teaspoon of vanilla extract
  • 3 cups of powdered sugar

Directions:

Prepare your chocolate cake according to the directions on you cake mix box or according to your chocolate cake recipe. As soon as the cake has finished baking, remove it from the oven and sprinkle the mini marshmallows over the top of the cake. Be sure to cover it completely. Then, place the cake back in the oven at 350 degrees Fahrenheit for approximately 2-3 minutes or until the marshmallows have puffed up and have begun to melt. Allow the cake to cool down.

While the cake is cooling, prepare the frosting in a small pan on your stove. Put the stick of butter in the pan and melt it over medium-high heat. Once the butter melts, add the milk and cocoa powder and whisk the ingredients together thoroughly. Cook the frosting for 2-3 more minutes and stir it constantly. After you have removed the frosting from your stove, add the vanilla extract and powdered sugar. You may want to use a handheld mixer to combine the ingredients into a smooth consistency. After the mixture has reached the desired consistency, pour it over the cake and allow it to set.
