Valentine’s Day 2017 is less than a week away! Most people try to make the day special with their family, spouse, or significant other! One way to make the day extra special is with this recipe for a delicious Strawberry cake for 2!

Directions:

Begin by making the strawberry sauce. In order to do this, you simply puree the 2 cups of strawberries in a blender or food processor. Then, put the pureed strawberries in a pan on medium-high heat and bring them to a simmer. Stir until the strawberries turn into a thick, jelly-like substance. Then, remove from heat and set it off to the side.

Next, preheat your oven to 350 degrees Fahrenheit and spray a 9×13″ cake pan with nonstick cooking spray. In a bowl, mix together the flour and baking soda. Then, set that bowl to the side. In another bowl, beat the butter with a mixer until it becomes fluffy. Then, add in the sugar. After that, add the egg, egg white, and vanilla extract. After that is mixed together, add the strawberry sauce. Next, add have the flour mixture and half the buttermilk. Mix together well and add the remaining flour mixture and buttermilk. Pour the cake mix into the prepared pan and bake in the oven for approximately 20 minutes. Once the cake has finished cooking, allow it to cool in the pan for 10 minutes. Once the cake has cooled, cut it into circles of the same size.

To make the frosting, beat the butter in a bowl until it becomes fluffy. Next, add in the strawberry sauce and the vanilla extract and blend together. Add half the powdered sugar until it mixes in, and then add the remaining half. Spread layers of the frosting between your cakes and then frost the entire cake. Then, dig in and enjoy!
